Welcome to the weekend my friends! It’s been a whirlwind of a week in Switzerland, exploring the area around Lausanne, enjoying the ballet and eating copious amounts of cheese, chocolate and pastries.
I’ll share more in a full blog post after I get home, but in the meantime, let me just say that the Alps are beautiful, the architecture is breathtaking, and the weather was great.
ON THIS WEEK’S BLOGS: This dairy-free Banana Pineapple Smoothie is light and refreshing, perfect with breakfast or as a snack anytime during the day.
The fluffy pancakes are infused with the juicy flavors of ripe pineapple, sweet coconut and a sprinkling of crunchy macadamia nuts. Hawaiian Pancakes at high speed.
Tender, savory beef simmers with a mix of herbs and earthy vegetables under a golden, flaky pie crust in this simple beef pot pie.
A handful of simple seasonings turn frozen green beans into a great side dish with Italian green beans.
The rich and hearty flavors of cabbage and root vegetables combine with savory beef in a slow-simmering pot Cabbage beef stew. This is the kind of comfort food that warms you right down to your toes.
Drizzled with the sweetness of fresh apples and spiced with a hint of cinnamon and nutmeg, these old fashioned Apple Cinnamon Cookies it will take you back to grandma’s kitchen.
This creamy, rich blueberry ice cream is loaded with melt-in-your-mouth dark chocolate chunks. This ice cream has been my weakness for several years. Do it as soon as possible – you won’t regret it.
What I WRONG: Salads! Almost every time I travel, I start to crave fresh vegetables and salads like crazy until I’m ready to go home. This Spinach Orzo Salad with Cranberries and Goat Cheese needs to be made ASAP, as does this Shaved Brussels sprouts salad with apple cider vinaigrette.
MY FAVORITE THING this week it’s mine pocket sized pill organizer. I have been using this tiny pill case for a few years now. This might be the most useful and functional travel item I own. With 10 different compartments in a palm-sized case, I can travel with every possible medication I might need at any time. Granted, I rarely need them all, but when a travel cold or an upset stomach hits? No need to find a pharmacy at the last minute.
WHAT I’M READING: A true love by Taylor Jenkins Reid. This was a quick read, a perfect way to spend a leisurely morning. While I found the story implausible (surviving alone on a small island for years?) and didn’t have the depth I expected from the story, I was still drawn in and read the book cover to cover in one sitting. It was a refreshing break from some of the more intense books I read at the same time.
“Have this mind among yourselves, which is yours in Christ Jesus, who, though he was in the form of God, did not consider equality with God something to be apprehended, but became nothing, taking the form of a servant , born in the likeness of men”. Philippians 2:5-7 NIV
I wish you a beautiful week full of little things that make you smile!
