My dad loved brownies. We often had them for dessert with vanilla ice cream. He was a bit curious though and liked the slightly burnt brownies better. She left the leftover brownies overnight to dry and in the morning dipped them in coffee like cookies.
So while it was definitely a rarer dessert than my mom’s Jell-O, the brownie and ice cream combo was one I happily lived with as a toddler. They’re a classic couple, and for good reason.
I love the way the intense chocolate pops out of the light sweet vanilla ice cream. Textures alternate between crunchy, chewy and smooth. And, in the classic case of an ice cream brownie, it tastes warm and iced at the same time. The balance is dreamy.
You can use any brownie you like for this ice cream. I was inspired by them Oreo Brownies. But, Dark Chocolate Brownies are great on vanilla ice cream, and these gluten-free Double Chocolate Brownies would work, too.

Now, I’m not going to tell you how to eat your ice cream. And, I happen to think the world is better when people don’t tell me how to eat it, me.
You wouldn’t visit the Empire State Building and only go halfway to the top, right? You will miss the best part of the experience. Well, Oreo brownie ice cream is AMAZING, but consider these magic words: Salted Caramel Sauce.
Correctly. A simple drizzle of salty-sweet heaven transforms this dessert into a salted caramel brownie ice cream. Again, I’m not going to tell you how to eat your ice cream. But, consider that view from the top!

Brownies with ice cream
You will need the following ingredients to make this recipe:
- whipping cream
- kosher salt
- vanilla extract
- COLD brownie pieces, chopped
- chocolate sandwich cookies

To start this recipe, whisk together the cream, milk, sugar, salt and vanilla. Pour the mixture into your ice cream maker and freeze according to the manufacturer’s instructions.
While the ice cream is churning, cut each cookie into 4 pieces. When the ice cream is done, spread about a cup of brownie and cookie pieces in the bottom of a freezer-safe container.
Pour half of the ice cream over the cookies in the bowl, scatter more brownies and cookies over the ice cream. Then put the rest of the ice cream in the container and add the rest of the brownies and cookies. Freeze until firm. Enjoy!

Beat together the cream, milk, sugar, salt and vanilla. Pour the mixture into your ice cream maker and freeze according to the manufacturer’s instructions. While the ice cream is churning, cut each cookie into 4 pieces.
Spread about a cup of brownie and cookie pieces in the bottom of a freezer-safe container. When the ice cream is finished churning, spoon half the ice cream over the cookies in the bowl.
Then scatter more brownies and cookies on top of the ice cream. Spread the remaining ice cream all over the container and top with the remaining brownie and cookie pieces. Freeze until firm. Enjoy!
