Healthy fall recipes include squash, pumpkin, turkey, apples and more squash. This time of year is filled with delicious foods that are cheap and affordable.
I live in “FALL CENTRAL” AKA New England which is the place to celebrate fall. After many years in a windowless office, I am now looking out at the brilliant colors of fall foliage as I write this. It’s spectacular.
Fall food is also spectacular. I drive by farms with pumpkins, squash and tons of apples. My beloved tomatoes are gone but I don’t mourn them for long.
I didn’t grow up eating squash and pumpkin, but I slowly developed a taste for it after a lot of trial and error. The best way to cook it is to bake it. The flavors become more intense and the texture becomes soft and luxurious. I love roasted fall vegetables on a pile of arugula with a little vinegar.
